Proficiency

Saturday family lunch at my sister-in-law´s little country house is always remarkable and it is always beautiful and impressive to watch my mother-in-law cooking traditional meals. It is impossible to know how many thousands of meals she has prepared for her husband, her seven children (+ spouses), and seven grandchildren but one thing is clear: She is a very, very accomplished cook. Of course she never takes 5 grams of salt or a spoon full of salt. Instead, she professionally grabs with her hand the perfectly appropriate amount and adds it to the meal. It is everything feeling and intuition and just knowing. The very skill of cooking, that level of performance has evolved over years by learning through repetition. It is based on hard work, practice, and experience and that is the lesson I take away from those Saturdays.
